Greens are nature’s scrub brushes; they help clear out toxins, loosen mucus and cleanse the blood and respiratory systems. They are one of the most important foods we can eat for good health. Leafy greens are low in calories and carbohydrates, yet extremely high in nutrients: they contain noteworthy amounts of calcium, magnesium, potassium, iron, vitamins A, C, E, and K, as well as folic acid, and fiber. They’re also full of beneficial phytochemicals and carotenoids.

Chilled Leafy Green Salad

Ingredients:

  • 2 bunches of kale, washed and cut into thin strips
    (add 1 handful of fresh arugula, spinach or romaine cut into strips)
  • 2 cloves of garlic, crushed
  •  2 tablespoons of sesame oil and/or oil of your choice
  •  2 tablespoons of fresh lemon juice or organic apple cider vinegar
  •  2 tablespoons of water
  • Fresh ground black pepper and salt to taste.
  1. Toss all of the ingredients in a large bowl and mix by hand
  2. Chill for 20 minutes before serving.This recipe can also be sauteed, enjoy hot!
